Baked Zucchini Balls.

Sometimes I feel like I have the fussiest eaters on earth, for children. I legit wonder how they have the endless energy they do, fueled by nothing but a few dried, plain cheerios for breakfast. My 7 year old daughter likes to tell everyone how she’s a vegetarian, when in reality she won’t eat meat unless it’s been processed to the point where it no longer tastes like meat. Then there’s my 3 year old son; he cries when i make him a meal he doesn’t like, but then will also cry if i tell him I’ll eat it. Yes friends, I’m an asshole parent.
So I decided to try something different in an attempt to please them, Baked Zucchini Balls. They appealed to 1.5 out of 2 kids, I say 1.5 because my boy decided 2 zucchini balls in that he suddenly didn’t like his meal and proceeded to regurgitate it onto the plate and surrounding areas….he consumed half his meal so I’ll call that a win.

Detoxifying Chopped Salad.

I don’t know about you but if you have children who recently went Trick-or-Treating and returned home with a bag full of chocolates, it takes every bit of will power (in me, at least) to not sneak a few after they’re in bed. It’s really tough. I have to inspect and shuffle through a mountain of these full size cookies and cream and Kit Kat bars and all i can think about is “Which one will they not notice is missing?”

Roasted Red Pepper Prawns with Chickpeas.

Last week I spoke briefly about my intense denial about summer being over, nothing has changed… You see, I grew up taking summer’s for granted, I grew up by the ocean.
Almost all of my most favourite memories involve the beach. As a kid, most of my shoes carried sand in them, camping was always by a beach, I chose beach fitness for school sport on Thursdays and I was practically a marine biologist by Grade 3, able to rattle off the name of any crab or sea creature lurking in the rocks.  When I moved to Canada I shook the sand from my shoes, but it never left my soul. “Fish and chips” will always fit my macros, actually ANY seafood will and this is how I got to making a prawn (or shrimp as it’s called here) dish. I’ve been missing the heat, got all nostalgic and craved seafood.

Moroccan Pork Tenderloin.

Ok ok… So I got a bit carried away with the dessert recipes and just realized I haven’t posted a “meal” as yet. Well friends, you’re in for a treat. Today, I present to you Moroccan Pork Tenderloin.

I was never a huge fan of pork unless it was called bacon…but I am so glad I tried this recipe. The recipe was actually given to me by a friend who insisted I make it and I have never looked at pork  the same since.
