Detoxifying Chopped Salad.

I don’t know about you but if you have children who recently went Trick-or-Treating and returned home with a bag full of chocolates, it takes every bit of will power (in me, at least) to not sneak a few after they’re in bed. It’s really tough. I have to inspect and shuffle through a mountain of these full size cookies and cream and Kit Kat bars and all i can think about is “Which one will they not notice is missing?”

I have been good this year though. I haven’t used my breaks to indulge in a satisfying KitKat regardless of how tempting it has been HOWEVER the same can’t be said for everyone. So today I decided to post a super simple, detoxifying chopped salad, to help those of you who feel they indulged a little too much, get back on track.

Parsley is a natural blood sugar balancer, it protects against insulin resistance, especially helpful after a sugar binge. Cilantro can help cleanse the body of toxic metals, it’s an excellent source of antioxidants and furthermore it’s loaded with vitamins and minerals. Together, both parsley and cilantro exhibit powerful detoxifying properties.

Detoxifying Chopped Salad

1 Large head chopped lettuce
1 Can black beans (rinsed and drained)
1 Large orange bell pepper finely chopped
1 Small container cherry tomatoes quartered
2 Cups canned or fresh corn
5 Green onions finely chopped
1/2 Cup parsley chopped
1 Avocado sliced

1 Cup cilantro
1/2 Avocado
2 Tbsp. Fresh lime juice
1 – 2 Garlic cloves
1/4 Cup Olive oil
1 1/2 Tsp. White wine vinegar
1/8 Tsp. Salt

Combine all salad ingredients in a large bowl.
Blend Dressing ingredients together.
Toss salad with dressing.
