Desperate for a change and wanting to experiment….
Oatmeal with honey, oatmeal with berries, oatmeal with yogurt. I was over oatmeal. I wanted a change.
Pulling out a huge bag of quinoa, I (kind of ) remembered a breakfast I used to make.
And so… after cooking up my quinoa I decided to experiment, see if i could recreate the recipe in my head. Although the end result wasn’t exactly the same, it was still a winner and I want to share it with you. It’s incredibly easy to make, packed with energy and protein and has been an absolute game changer for me!
Makes approx. 6 + servings
3 cups cooked quinoa
1/2 cup dried cranberries
1/2 cup raisins
1/4 cup pumpkin seeds
1/4 cup hemp seeds
1/4 cup desiccated coconut
1 tbs ground cinnamon
1/2 cup walnuts
1/2 teaspoon vanilla extract
Once quinoa is cooled, stir in remainder of ingredients and transfer to bowl.
Keep covered in fridge and TA.DA, you’ve pre-made your weekday breakfasts!
*serve warm or cold, with milk of your choice.
My personal favourite way; cold with coconut milk and a chopped banana on top.
